I mean, do I even need to justify this one? Bacon is delicious, end of story. While it's delicious, it's not overly healthy... you know this, I know this, so I won't try and pretend that baking it all of a sudden turns it into a health food. But it will help cut down on the fat and grease content, and every once in a while it's a delicious treat to add to breakfast.
I personally make brunch every Sunday with my boyfriend and we have this bacon, pancakes, and eggs, and it's one of my favorite meals of the week. And don't worry, you don't sacrifice ANY flavor by baking it vs. pan frying it. In fact, I feel like it's MORE flavorful when it's baked, and this is now my favorite way to have it.
30 minutes total cook time
- Bacon (highly recommend Niman Ranch brand, it is free from nitrates, artificial preservatives, sugar, and hormones).
- Turn on oven to 375 degrees.
- Place tin foil lined baking pan on bottom shelf.
- Place bacon on rack directly above pan.
- Make sure bacon will drip over pan, adjust accordingly.
- Cook for 20 minutes and check it. I like crispy bacon, so depending on how thick the particular cut is, I'll leave it in for another 10 minutes. For thinner cuts, I also decrease the oven temperature to 350 degrees after the first 20 minutes. It all depends on how you like your bacon cooked. For me 20 minutes @ 375 degrees, and 10 minutes @ 350 degrees seems to be the magic formula.
You'll notice all the grease on the pan on the bottom picture (yes, this is what you are saving your arteries). I save this grease in a jar, and use it to season all of my cast iron (gives food an amazing flavor), and the tin foil makes clean-up a snap. Only other caveat is that if you don't clean off your oven rack after, it'll smoke next time you use your oven, and your smoke alarm will likely get very excited and remind you that you were too lazy to clean it after making bacon. This happens to me pretty much weekly. Just a fair heads ups. Enjoy!
