No Yeast Bread

Homemade bread is just amazing, but BOY IS IT A PAIN TO MAKE. Also, who keeps yeast just on hand and laying around?! The other night Sean was making a veggie medley and grilled chicken dish for dinner, and I felt that it deserved a nice piece of bread, biscuit, roll, or something to go with it. I'm also still trying to finish off my whole wheat flour before our move to LA, so it seemed like a win win. But as I browsed recipes for bread or rolls, I realized that I didn't have time, ingredients OR the patience to make a proper loaf of bread. 

But now that I had started looking for recipes, I REALLY wanted bread. So I googled yeast-less options and found a few, but none that looked particularly good or used many healthy ingredients. So I decided to throw caution to the wind, and make-up my own version. Worst case scenario it would taste awful and I'd be bread-less with dinner (probably not the worst option). It still took about an hour to mix and bake, but the result was surprisingly good! Especially with a little jam as more of a dessert. Mmmm...

Time Allotment: 

10 minute prep | 50-60 minute bake time

Ingredients: 

  • 1 1/4 cup whole wheat flour
  • 1/4 cup almond flour (*you could omit and use 1 1/2 cup whole wheat flour if you don't have almond flour, but it adds a nice nutty favor to it)
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup almond milk
  • 2 tbsp coconut oil, melted

Directions: 

  1. Pre-heat oven to 375 degrees. 
  2. Combine dry ingredients and mix thoroughly. 
  3. Mix coconut oil into almond milk, and add to dry ingredients. 
  4. Mix together until flour is absorbed (you don't need to go crazy mixing, it's like pancake batter, does best when it's kept a little lumpy). 
  5. Pour onto parchment lined baking pan and form into desired loaf shape. 
  6. Brush top of dough with either olive oil or a light layer of butter (I used butter). I also added a dusting of sea salt for flavor, and you could also add seeds or nuts to the top if desired. 
  7. Bake for 50-60 minutes, remove once bread has browned on the edges. You may need 5-10 extra minutes depending on how hot your oven runs, just keep an eye on it and remove once browned. 
  8. Let cool ~15 minutes before cutting.

This bread will not rise much (no yeast), so don't be surprised if it looks about the same after it's baked as it does when the loaf went in. But its really easy to make (you can kinda forget about it for the hour it's in the oven), and you don't need to wait around for it to rise or knead it or give it extra love just to get a nice piece of homemade bread. The flavor is fairly neutral, and is definitely best with some sort of spread on top. But it could also be tailored to a dish by adding different spices or toppings to it, sky's the limit, go crazy with it!
